Pineapple doesn't shy, and coconut doesn't rush. Together over ice, they're golden and creamy at the same time, sweet with a round finish that makes you sigh into the plastic cup. It's a beach-day mood with errands still on the schedule. I found this jar at El Mercadito with mariachi music climbing the walls, and I can now report that coconut tastes better with trumpets. The second pour is the troublemaker. Pineapple stays bright, papaya adds a mellow melon-and-honey sweetness, then jalapeño strolls in late and warms the whole room. Sweet first, heat after.
